Pecan Butter Balls (Mexican Wedding Cookies)
Yield: 50 cookies
Ingredients:
- 1 cup (2 sticks) unsalted butter, room temperature
- 1/4 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 1 1/2 cups finely chopped pecans
- 2 cups powdered sugar
Directions:
- Preheat oven to 350° F.
- Cream butter, add sugar.
- Add salt and vanilla.
- Slowly add the flour to the mixture
- Add the chopped nuts and mix until just combined.
- Roll dough into one inch balls and place 1" apart on cookie sheets.
- Bake 15 minutes or until starting to brown.
- Remove cookies from the oven and roll them in powdered sugar.
- Place cookies on a cooling rack.
- Once cookies have cooled completely, roll them in powdered sugar again.
